Waterkloof Estate
‘Peacock Ridge’ Stellenbosch Sauvignon Blanc 2006
this clean, well-made Sauvignon is an extremely poised and well-balanced wine.
South Africa is increasingly highly regarded for this varietal; the climate here
certainly seems to suit, with the resulting wines tending to sit nicely in between
the vibrant, intensity of New Zealand and Chile, and the restrained elegance of
the Loire Valley. That having been said, this example does offer considerable
concentration of fruit as a result of spending three weeks on its lees prior to
bottling.
