Delestage and pumping over were both employed during fermentation to maximize
colour and tannin extraction. 20% of the wine was aged in new French oak, the
balance spending 10 months in second fill French oak. The final blend including
12% of Cabernet Sauvignon spent 3 months in bottle before release. Given its considerable
ABV this is an extremely elegant, poised wine with a wealth of supple plum and
red fruit character.
