This Domaine deep in the south west of France is owned by the Faixo family who
produce a stunning wine from their 14ha in the very heart of the ‘great bowl’
of Fitou where all of the best grapes are grown. This is 50% old vine Carignan,
40% Grenache with a small amount of Syrah. Yields on this chalky clay are kept
low, typically 35hl/ha. Vinification involves a 2 - 3 week cuvaison in tank, followed
by élévage in Cuvée.
