Duc de Foix Cava Brut

Our preferred Cava for some years now; this is a blend of equal parts of Catalan
grapes Parellada, Macabeo and Xarel·lo from the immaculate Covides co-operative
just outside of Sant Sadurní d’Anoia. Duc de Foix is given a minimum of 36 months
ageing prior to release; a significant amount more that the legal minimum of 9
months, as is the case with most own label. This ensures a dry yet soft and well-rounded
wine with an elegant structure and clean bouquet.
