Wines from Waipara, just outside Christchurch are not seen too often outside of Australasia, which is a shame as there are some really interesting wines made here, with this being a point in case! Waipara Springs is a 26ha estate encompassing some of the oldest vines in the area. Despite being further south (colder) than Marlborough, this delightful wine has a surprisingly rich and creamy style as a result of a period of aging on its lees.
