Guy Charpentier has some 44ha of mature vines, all south facing with yields kept
below 50hl/ha. Grapes are harvested at optimum ripeness, only the best pressed
juice is selected and stabilized at 8°to retain the delicacy of aroma and allow
optimum perfume extraction. Following cold fermentation it spends the following
months on its lees gathering depth of flavour and concentration.
