Vallone ‘Graticciaia’ IGT Salento Rosso 2001
A sumptuously rich, rounded and concentrated wine essentially made using the appassimento
method employed in the production of Amarone, but this is from Puglia (the heel)
and features a combination of Negroamaro and Malvasia Nera. It takes its name
from the graticci (straw mats) on which the late harvested grapes are laid out
in the Autumn sun to become dried out and ‘super-concentrated’ resulting in a
powerful but velvety textured red that has become the standard-bearer for the
Lecce based Agricole Vallone.
