‘The Devil’s Oven’ is the hottest part of Paola Brini’s estate with 14% the norm
here! This delightfully ‘grainy’ Riserva spends 12 months in barrique with 20%
renewed annually. Inevitably, this is dominated by Sangiovese with just a smattering
of Canaiolo Nero giving a firm structure and an alluring hickory finish. This
is delicious just now, but will continue to evolve and open up with a further
3 or 4 years of bottle ageing.
