Ripasso 2005
Ripasso is essentially a ‘stepping stone’ between
Valpolicella Classico and Amarone; the un-pressed
skins of dried grapes which were used to make Amarone
are added to a young Valpolicella (Ripasso translates
as re-passed). This adds extra flavour and alcohol,
with the latter kick-starting re-fermentation. The
wine eventually takes on the luscious flavours of
Amarone; it is then aged for 16 months in a combination
of French and American oak casks and small barriques.
The Capitel della Crosara vineyard is in the hills
of Negrar. |
